Vegan Lebanese Bird's Nest Baklava Recipe


I focus a lot on a healthy lifestyle & healthy recipes but this however is not one of them. 
This is a recipe for when you want to indulge. Which is perfect because Christmas is almost here & I will be making these for Christmas day this year. My father-in-law is from Syria (& is Lebanese descent) and would order these amazing Lebanese treats around the holidays or for special events. 

Everyone loves how amazing they taste and since I've become interested in making recipes (&being vegan!) I wanted to create a recipe I could make at home. These are inspired by the bird's nest treats that came from that amazing treat box. I love how they turned out, not only how they look but they taste amazing. I will be bring them to my in laws for Christmas this year. 


Ingredients

1 package Phyllo Dough
 (I pre bought the phyllo dough and checked to make sure it was vegan)
1 Wooden Round Dowel
1/4 cup melted vegan butter 
butter brush
1/2 cup pistachio nuts (crushed but not grounded)
1/2 cup water + 1/4 cup of date syrup + 1/4 cup brown sugar
(I use this brand of date syrup: https://ilovedatelady.com/products/date-syrup )

Date Syrup is amazing its literally just dates. I love it.


Directions:

Preheat your oven to 400 degrees.

Make sure you thaw out the Phyllo Dough before working with it.
(Leave at room temperature for 2 hours or leave overnight in refrigerator)

Take two pieces of Phyllo Dough and roll up together with the wooden round dowel. Leave a little bit of the phyllo dough unrolled and pick up then place against stomach. Push the sides of phyllo dough together and remove off of wooden dowel. One a baking sheet take the phyllo dough and make into a circle pressing down the extra to the center. Continue to you have all your empty bird's nests made. 
Take your melted vegan butter and brush on each bird's nest well. 

Place into your oven for 20 minutes until golden brown.

On the stove top add water to a pan and bring to right before a boil. Add in the date syrup, brown sugar, mix well, and bring to a boil. Turn off heat. 

Once your bird's nests are done take it out of the oven and slowly scoop the date water mixture onto the nests. Coat well.

Add the crushed pistachio nuts into the center of the bird's nests. 
Let cool for 5-10 minutes and enjoy!
