Christmas Chocolate Chip Cookie Recipe

One of my favorite cookies to have around the holiday is a classic chocolate chip cookie. This however is no ordinary chocolate chip cookie. Its the best chocolate chip cookie I've ever made! Not only do they look amazing but its seriously mouth watering good. They did not last long in our home. I will be making these again for Christmas Eve and I am sure everyone will love them just as much as we did. The recipe is also so easy and you can double it to make a bunch for family & friends. 


1 Cup Brown Sugar 
1/4 cup + 3 Tbsp almond milk unsweetened 
1/4 cup of PB2 (Mixed with water to constantly of peanut butter) - or regular peanut butter
1 2/3 cup spelt flour 
1/2 tsp baking soda
Dairy Free Chocolate Chips - I used the brand Enjoy Life Chunky Chocolate Chips 


Preheat Oven to 350 degrees 
Mix together the brown sugar and almond milk together in a mixture. 
Add into the peanut butter into the mixture and slowly add in the spelt flour little by little. 
Place the 1/2 tsp baking soda in the mixture 
Be careful not to over mix
Fold in the dairy free chocolate chips to your desired amount
Make your dough into a small-medium balls and leave a nice space in-between the cookies sheets
(Double the recipe if you'd like more than a dozen) 
Bake for 14 minutes until cookies are golden brown on top


Enjoy with a nice glass of Silk almond milk & I'm sure Santa wouldn't mind a vegan treat when he stops by your house.
