Mashed Potatoes Lentil and Gravy Recipe


Happy November! 

I love the month of November for all the amazing comfort foods. 
This recipe totally doesn't disappoint and better yet, its healthy! 

I love this combination of potatoes, lentils, and my plant based gravy.
 It totally hits the spot for the Thanksgiving inspired comfort meal. 

Also this recipe is so easy to whip together that you'll want to 
make it several times all throughout the month.


Ingredients:

1 cooked potato

1/4 cup cooked green lentils 

1/4 cup almond milk 

1 tsp onion powder 

1 tsp garlic powder 

1/4 nutritional yeast 

1/2 frozen vegetables (cooked)

Salt & Pepper (to taste)

Directions:

Mash the cooked potato with the almond milk

Add in seasonings and nutritional yeast

Salt and pepper to taste

Start building plate with potatoes & then add green lentils on top

Cover with gravy and add cooked vegetables to the side

Plant Based Gravy Recipe

Ingredients:

1/2 cup vegetable broth 

1Tbsp nutritional yeast

1 Tbsp tapioca flour 

1/2 Tbsp low-sodium soy sauce

1/2 tsp onion powder

1/4 tsp garlic powder  


Directions:

Add all ingredients to a sauce pan and whisk together

Turn heat to medium high and let gravy come to a boil

Stir till desired thickness

Enjoy over the mashed potatoes lentil and gravy recipe
