Easy Sweet Potato Casserole Recipe


One of my favorite side dishes of Thanksgiving is a sweet potato casserole... 
especially if they have marshmallows. 

This year is my first vegan Thanksgiving so I was so excited
 to recreate my favorite recipe cruelty free. 

Plus you can customize this recipe to have any toppings you like marshmallows, pecans, etc. 

Ingredients: 

2 Large Sweet Potatoes 

1 cup almond milk (unsweetened)

1 Tbsp Flax mixed with 3 Tbsp Water 
(Mix together and set aside for 15 mins)

1 tsp cinnamon 

1/4 tsp nutmeg 

1/4 cup coconut sugar 

1/4 cup vegan marshmallows

Directions:

Bake the sweet potatoes in oven at 350F for 90 minutes
(Poke sweet potatoes with a fork all over before cooking)

Take off skin of sweet potatoes and mash the filling with a fork

Add in the almond milk, flax egg, cinnamon, nutmeg, & coconut sugar

Bake in oven for 10 minutes

Add vegan marshmallows on top and bake for 5-7 minutes 
(until marshmallow are lightly brown)

Serve warm & enjoy!
