Vegan Lasagna with Almond Ricotta "Cheese" Recipe!

I promise this tastes amazing despite my awful lasagna photo! 

Who doesn't love lasagna? 
I'm pretty sure I've never met that person. 
So being vegan and having a husband who loves cheese lasagna 
I needed to come up with a healthier swap. I have found it. 

Vegan Ricotta Cheese!

Vegan Ricotta Cheese Recipe
(This has to be made 24 hrs in advance)


+2 cups blanched sliced almonds 
1/2 cup water
2  tbsp lemon juice
2 tbsp nutritional yeast
1/2 tsp sea salt
1/4 tsp garlic powder
1/4 tsp pepper
1 tbsp basil

In a high-powered blender combine all the almond ricotta ingredients together
Scoop out the mixture into a cheese cloth and wrap
Place in your refrigerator for 24 hrs

Now to the lasagna!

You can make this lasagna any way you like using the vegan ricotta cheese.
I sauteed 1 large bag of spinach and 1 large zucchini for the filling of our lasagna.

I cooked the lasagna noodles as told on packaging.
Then I added a little tomato sauce to the bottom of my 
baking pan and started assembling. 

Sauce -whole wheat lasagna noodles - spinach and zucchini filling
 - noodles - vegan ricotta cheese - sauce -noodles - and so on and so on. 

I then placed the baking pan in a preheated oven at 350 degrees for 40 minutes.
