Celebrating Cinco de Mayo with a Vegan Easy Burrito Bowl!


Who else is a lover of Mexican food?! Well it being Cinco de Mayo I had to make one of my favorite Mexican dishes! I love this easy deconstructed burrito recipe. Mainly because I bought a tortilla that was to small, but it all worked out to be so yummy! You can also customize this recipe with any burrito ingredients that you like. 
Lets get into the recipe!


You'll need:

1 Tortilla

1 Avocado

1 cup of cooked jasmine brown rice

1/4 cup of black beans

1/4 cup of salsa 

3 Tablespoons of Vegan Cheese (I used daiya)

5-6 blue corn chips crushed

Directions:

+Toast the tortilla on a skillet till each side is brown

+Cut the tortilla into four sections and place on the side

+Build your burrito bowl, start with the rice & black beans

+Add the melted vegan cheese

+Top with avocado, salsa, & blue corn crushed chips

+Place the toasted tortilla around the burrito bowl

+Enjoy!
