Sansa's Vegan Lemon Cakes Recipe

Game of Thrones Season 6 starts this Sunday!!! 

I am a huge Game of Thrones fan and will totally be watching the new episode airing this weekend. So this recipe is inspired by Lady Sansa and her love for lemon cakes. Of course this recipe is vegan as well! This is the perfect treat to enjoy why your watching the season premier! They are adorable and so tasty! 

Lets get into the recipe! 

You'll need:

1-1/4 Cup Coconut Flour

1/2 Cup and 2 Tablespoons Cane Sugar 

2 Tablespoon Flax Meal and 6 Tablespoon Water (Flax Seed Egg)

1/2 Cup Melted  Vegan Butter

1/4 Cup  Cashew Vegan Sour Cream

2 Teaspoons Baking Powder

1 Teaspoon Vanilla Extract

1 Pinch of Salt

1 Lemon Zested and Juiced

8 Ounces Water

 8 Ounces Cane Sugar

3 Meyer Lemons


+Slice the 3 Meyer lemons - trying to get 12 nice lemon slices. 

+Add 8 ounces of water and 8 ounces of cane sugar to a medium sauce pot.
Wait till the mixture boils and add your lemon slices. Let them cook for about 7 minutes. Move the lemon slices to a cooking sheet (lined with parchment paper) and let cool for 24 hours. 

+Now to make the cake batter. Add the flour and flax seed egg mixture into a mixing bowl. 
+Whisk together and add the cashew vegan sour cream until well combined. 
+Add in the zest of a lemon and lemon juice. 
+Add in vanilla extract 

+Add in all the dry ingredients: flour, baking soda, and salt.
+Mix until well combined.
+Add in the vegan butter melted, make sure its at room temperature. 
+Once whisked the batter is ready!

+Lightly grease a cupcake tin and add a lemon slice to the bottom of each cup. 
+Add the lemon batter to each cup - about 2/3 the way full.
+Heat Oven to 325 degrees and bake for 25-30 minutes. 

+As soon as the lemon cakes are out of the oven, flip the cupcake tin over on a pan lined with parchment paper. You want to do this quickly so the lemons don't stick to the pan.

+Now they are ready to eat!!
